Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

For the Streusel Topping:

  • 1/2 cup brown sugar packed
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter cold and cubed

Instructions

  • Begin by preheating your oven to 350°F (175°C). Thoroughly grease a 9-inch square baking pan to prevent sticking.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt for the cake batter. Ensure all dry ingredients are well combined.
  • Using a pastry cutter or your fingers, cut the butter into the dry mixture until it resembles coarse crumbs. This step is crucial for achieving the signature texture of Hobee's Coffee Cake.
  • In a separate bowl, whisk together the milk, eggs, and vanilla extract. Gradually add this wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
  • Gently fold the fresh blueberries into the batter, taking care not to crush them. Pour the batter evenly into your prepared baking pan.
  • For the streusel topping, mix the brown sugar, flour, and cinnamon in a small bowl. Cut in the butter until the mixture is crumbly and well combined.
  • Sprinkle the streusel topping evenly over the cake batter. This layer gives Hobee's Blueberry Coffee Cake its distinctive appearance and flavor.
  • Place the pan in the preheated oven and bake for 40-45 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  • Once baked, remove the coffee cake from the oven and allow it to cool in the pan for about 10 minutes before serving. This cooling time helps the cake set and makes it easier to slice.
