- ½ cup heavy whipping cream chilled (120g)
- ¼ cup sugar 55g
- ½ tsp vanilla
- ¼ tsp salt
- 1-2 tablespoon lemon juice or to taste
- 6 oz cream cheese room temperature (170g)
- 4 tbsp strawberry jam
- 2 tbsp water
- 1 tbsp sugar
- 1 tsp cornstarch
- 2-3 Graham crackers and 4-5 strawberries.
Cheesecake Filling:
Whisk heavy cream, sugar, salt, vanilla, and lemon juice until it thickens.
Add room temperature cream cheese and whisk on low until creamy. Don’t overmix.
Taste and adjust as needed.
Put the mixture into a piping bag with a round tip.
Filling the Buns:
Use a small knife to make a hole in the side of each roll and create a pocket inside.
Fill each roll with about 25g of cheesecake filling.
Clean the edges and refrigerate the rolls.
Strawberry Glaze:
Mix all glaze ingredients in a small saucepan.
Cook and stir over low heat until thickened.
Remove from heat and let it cool slightly.
Dip the top of each roll into the glaze, shake off excess, and place on a wire rack.
