Ingredients
  

Dry Ingredients:

  • 2 cups All-purpose flour 240g
  • 1 1/2 cups Sugar 300g
  • 2 tsp Baking soda 10g

Wet Ingredients:

  • 2 Eggs
  • 1 can Del Monte fruit cocktail 15 oz / 425g
  • 1/2 cup Vegetable oil 120ml

Topping:

  • 3/4 cup Brown sugar 150g
  • 1/2 cup Chopped nuts optional (60g)

Instructions
 

Prepare the Oven and Pan

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking pan.

Mix the Batter

  • In a large bowl, combine flour, sugar, and baking soda.
  • Add eggs, Del Monte fruit cocktail (with syrup), and vegetable oil.
  • Mix all ingredients well until you have a smooth batter.

Bake the Cake

  • Pour the batter into the prepared baking pan.
  • Sprinkle brown sugar evenly over the top of the batter.
  • If using, add chopped nuts on top of the brown sugar.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

Finish and Serve

  • Allow the fruit cocktail cake to cool in the pan for about 15 minutes.
  • Cut into squares and serve warm or at room temperature.
