For the Chocolate Cake:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/3 cup vegetable oil
- 1 cup buttermilk
- 1 tablespoon instant coffee
- 1/2 cup boiling water
- 1/3 cup Dutch-processed cocoa powder
For the Mascarpone Cream:
- 1 cup heavy whipping cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 oz mascarpone cheese
For Assembly:
- 1 cup strong coffee or espresso cooled
- 2 tablespoons cocoa powder for dusting
Bake the Chocolate Cake
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, mix egg, oil, and buttermilk.
Combine wet and dry ingredients, mixing until just blended.
Dissolve instant coffee in boiling water and fold into the batter.
Pour batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
Let the cake cool completely in the pan.
Prepare the Mascarpone Cream
In a large bowl, whip heavy cream with sugar and vanilla until soft peaks form.
Gently fold in mascarpone cheese until just combined. Avoid overmixing.
Assemble the Tiramisu
Once the cake has cooled, brush it generously with strong coffee.
Spread the mascarpone cream evenly over the cake.
Cover and refrigerate for at least 6 hours or overnight.
