Ingredients
  

For the Chocolate Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 cup buttermilk
  • 1 tablespoon instant coffee
  • 1/2 cup boiling water
  • 1/3 cup Dutch-processed cocoa powder

For the Mascarpone Cream:

  • 1 cup heavy whipping cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz mascarpone cheese

For Assembly:

  • 1 cup strong coffee or espresso cooled
  • 2 tablespoons cocoa powder for dusting

Instructions
 

Bake the Chocolate Cake

  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix egg, oil, and buttermilk.
  • Combine wet and dry ingredients, mixing until just blended.
  • Dissolve instant coffee in boiling water and fold into the batter.
  • Pour batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
  • Let the cake cool completely in the pan.

Prepare the Mascarpone Cream

  • In a large bowl, whip heavy cream with sugar and vanilla until soft peaks form.
  • Gently fold in mascarpone cheese until just combined. Avoid overmixing.

Assemble the Tiramisu

  • Once the cake has cooled, brush it generously with strong coffee.
  • Spread the mascarpone cream evenly over the cake.
  • Cover and refrigerate for at least 6 hours or overnight.

Serve and Enjoy

  • Before serving, dust the top generously with cocoa powder.
  • Slice and serve your chocolate tiramisu chilled.
