Cake:
- 1 ½ cup all purpose flour 195g
- 1 ¼ cup granulated sugar 275g - can be reduced to 1 cup if you don't want the cake to be too sweet
- 1 ½ tsp baking powder
- ¾ tsp baking soda
- ¾ tsp salt
- 2 eggs
- ½ cup vegetable oil 100g
- ½ cup buttermilk 120g - use ½ cup milk + ½ tablespoon vinegar to make your own
- ¼ cup boiling water 60g
- ⅓ cup cocoa powder 33g
- 1 tsp instant coffee
Hot Fudge Pudding:
- ½ cup white granulated sugar 110g
- ½ cup packed light brown sugar 100g
- 4 tablespoons cocoa powder
- 1 ½ cups boiling water 360g
Preheat Oven & Prepare Dish:
Make the Cake Batter:
In a bowl, mix flour, sugar, salt, baking powder, and baking soda. Remove lumps.
Add eggs, oil, and buttermilk. Whisk together.
Prepare Cocoa Mixture:
In another bowl, pour boiling water over cocoa powder and instant coffee. Whisk until smooth and shiny.
Add this mixture to the cake batter. Fold gently to combine.
