Hot Fudge Chocolate Pudding Cake - Simple and Indulgent

Ingredients
  

Cake:

  • 1 ½ cup all purpose flour 195g
  • 1 ¼ cup granulated sugar 275g - can be reduced to 1 cup if you don't want the cake to be too sweet
  • 1 ½ tsp baking powder
  • ¾ tsp baking soda
  • ¾ tsp salt
  • 2 eggs
  • ½ cup vegetable oil 100g
  • ½ cup buttermilk 120g - use ½ cup milk + ½ tablespoon vinegar to make your own
  • ¼ cup boiling water 60g
  • cup cocoa powder 33g
  • 1 tsp instant coffee

Hot Fudge Pudding:

  • ½ cup white granulated sugar 110g
  • ½ cup packed light brown sugar 100g
  • 4 tablespoons cocoa powder
  • 1 ½ cups boiling water 360g

Instructions
 

Preheat Oven & Prepare Dish:

  • Preheat your oven to 350°F.
  • Butter a 7x11 or 9x9-inch baking dish (ceramic is best).

Make the Cake Batter:

  • In a bowl, mix flour, sugar, salt, baking powder, and baking soda. Remove lumps.
  • Add eggs, oil, and buttermilk. Whisk together.

Prepare Cocoa Mixture:

  • In another bowl, pour boiling water over cocoa powder and instant coffee. Whisk until smooth and shiny.
  • Add this mixture to the cake batter. Fold gently to combine.

Pour Batter:

  • Pour the batter into the prepared baking dish.

Make Fudge Sauce:

  • Mix sugars and cocoa powder, removing lumps.
  • Sprinkle this over the cake batter in the dish.

Add Boiling Water:

  • Carefully pour boiling water over the cake batter. Spread it evenly.

Bake the Cake:

  • Bake for 30-35 minutes. The top should look firm, but the bottom should be gooey. It’s better to underbake than overbake.

Serve:

  • Serve the cake hot with vanilla ice cream. Enjoy!
