Indulge in the ultimate brunch treat a great menu item, my mouthwatering cheesecake French toast topped with homemade berry compote.

Berry Compote
- 1 cup berries of choice I mixed strawberries and raspberries
- 1 tbsp lemon juice
- 1 tbsp sugar
Cheesecake Filling
- 4 oz cream cheese room temp
- ¼ cup heavy cream
- 2 tbsp powdered sugar
- ½ tsp vanilla
- ½ tbsp lemon juice
French Toast
- 2 eggs
- ⅔ cups milk
- ¼ cup sugar add ½ cup if you don't want to serve with any syrup
- ¼ to ½ teaspoon cinnamon
- ½ tsp vanilla
- 4 1 " thick slices of brioche or challah bread
- 2 tbsp sugar to fry
- 2 tbsp butter to fry
- Maple syrup to serve
- Whipped cream to serve
Berry Compote
Chop berries into large chunks.
Mix berries and other ingredients in a nonstick saucepan.
Cook on low heat, stirring until thick. Set aside.
Cheesecake Filling
Use a hand mixer to beat cream cheese for 1 minute until creamy.
Scrape the bowl, add powdered sugar and cream.
Whisk until thick and well mixed.
Transfer to a piping bag.
French Toast
Whisk eggs, milk, sugar, cinnamon, and vanilla in a bowl until smooth.
Pour mixture into a deep large plate.
Cut pockets in each bread slice, with a slit on one edge only.
Fill each bread slice with cheesecake filling and press to seal.
Dip each slice in the egg mixture, coating both sides well. Use all the mixture.
Heat 2 tablespoons of butter in a nonstick pan on medium heat.
Fry each bread slice until golden and crispy, about 3-4 minutes per side.
Sprinkle extra sugar on both sides while frying to caramelize.
Serve hot with maple syrup, berry compote, and cold whipped cream.
- For optimal results, I suggest purchasing a whole loaf of brioche or challah bread and slicing it to your liking.
- If you don't have access to pre-sliced bread or a loaf, you can create a delicious sandwich by layering two slices of bread with the cheesecake filling.
