Ingredients
  

Carrot mug cake:

  • 3 tbsp milk
  • 1.5 tbsp oil
  • ½ tsp vanilla
  • 4 tbsp all purpose flour
  • 2 tbsp sugar
  • tsp baking powder
  • ¼ tsp cinnamon
  • tsp salt
  • ¼ cup freshly grated carrots

Cream Cheese Frosting:

  • 1 tbsp cream cheese room temperature
  • 1 tbsp heavy cream
  • 1 tbsp powdered sugar

Instructions
 

  • In a microwave-safe mug (about 10-12 ounces), mix milk, oil, and vanilla.
  • Add flour, sugar, baking powder, cinnamon, and salt. Stir well until everything is mixed.
  • Add grated carrots and mix again.
  • Microwave for 60-90 seconds until the cake is fully cooked. (Time may vary, so check it.)
  • Let the cake cool for about 15 minutes.
  • In a bowl, mix cream cheese, heavy cream, and powdered sugar to make frosting.
  • Spread the frosting on the cooled cake.
  • Serve and enjoy!
